EXTRA-VIRGIN OLIVE OIL

Quercia al Poggio’s Extra-virgin olive oil is the result of the biological cultivation of around 1,500 olive trees, including Moraiolo, Frantoio and Leccino varieties, planted in groves and also along roads, vineyards and plots of land to prevent land erosion and to enhance the beauty of the rural landscape. The still green olives are picked by hand and loosely packed in crates that allow the air to circulate. We make sure very little time passes between harvesting and pressing in order to maintain low levels of acidity. The olives are then cold-pressed at the oil mill to best enhance flavour and aroma. The resulting oil is then bottled and much care is taken to store the oil in a cool, dry and dark place.
