VINSANTO

A limited amount of Vinsanto DOC Chianti Classico Quercia al Poggio is produced every year from white Malvasia grapes and a small quantity of Sangiovese grapes. In accordance with the Florentine tradition, the bunches of grapes are hung from the ceiling and left to wither for around 3-4 months until completely desiccated. Once this stage is complete and the concentration of sugar has reached a certain level, the grapes are removed from the stalk by hand and lightly pressed in a small wine presses. The sweet amber liquid that is obtained is then placed in oak barrels together with the “madre”, a small amount of unfinished Vinsanto from previous years, where it will mature and develop for five years, giving the final product its distinctive aroma and softness.
